I loved all the veggies (I also
chopped them up very fine in my chopper), and even added more than called for because I only had 1 pound of ground meat.
As far as the mushrooms goes, it's hard to find something with a similar texture, but perhaps you could use broccoli
chopped up very small or tempeh (or just use more aubergine and courgette!)
Whatever you use, just
chop it up very finely and prepare as you would with the mushrooms.
When i mixed them they were very lumpy because my ingredients weren't
chopped up very finely so i dropped the whole mixture into the food processor.

I won't bore you with how to make risotto, but for 2 people, the first uses 2 links of sweet italian sausage removed from its casing and cooked with a little olive oil in a heavy skillet, broken
up into small pieces and moved around until many of the pieces are crisp; then add sliced and roughly -
chopped fennel bulb, cooking until it is somewhat softened; then put a lid on the pan over
very low heat while the risotto cooks; add it all together (with butter and parmesan) for the last 5 minutes of the risotto process.
SoupAddict has the odd problem of her food processor not
chopping up leafy greens
very well.
