It doesn't really matter how small you cut them, because you can
chop them up more after they've finished cooking.
Diced is
chopped up more casually with a knife.
I also like to leave some almonds
chopped up more coarsely for extra crunch.

I realize this is not how most posts about slow cookers begin, but let me explain... I grew
up in a Filipino family where

chopped red chillies (enough for a spicy tang), and some sugar (not
more than a tablespoon).
Or
chop the veggies
up into
more bite - sized pieces and serve as a salad with a sprinkling of croutons and dollops of the aioli.
As far as the mushrooms goes, it's hard to find something with a similar texture, but perhaps you could use broccoli
chopped up very small or tempeh (or just use
more aubergine and courgette!)

Then I finished it
up with a sprinkling of
chopped cashews, which gave it a little
more sweetness and crunch.
It's too easy to get carried away, spend hours

up with either 1)
more of a stew than a soup or 2) a huuuuge pot of soup.
As well you might want to
chop up 8 full size reese cups the extra bit to put on top of the cookies dough before you bake them gives it a nice touch and makes it even
more delicious.
Some additions because i wanted to bulk it
up a little
more: 1 zucchini,
chopped, 1 red pepper,
chopped, 1 poblano pepper,
chopped, 6 crimini mushrooms, sliced... It was soooooo good!!!
Most grocery stores will carry 4 oz packages of Baker's Semi-Sweet Chocolate Baking Bars and I have been known to purchase these and

up into brownies, cookies, and
more.
I'm also a big fan of making a frittata with the beans all
chopped up and
more garlic and onions!

chopped my blackberries
up pretty finely (part of my weird cooked fruit texture aversion) but you could also leave them
more chunky, if you're into that sort of thing.
The only other change that I made was using
more apple - I used 3 large granny smiths that
chopped up to a little under 4 loose cups.
For fun, to sneak in
more nutrients, I
chopped up some of the heirloom spinach and added it to my baked red pepper, mushroom and sun - dried tomato spaghetti.
