Roasted garlic and summer
herb salt
blend: Harvest the last
of your summer
herbs, basil, sage, thyme, whatever you have, dry until they can crumble at your finger tips Roast 3 - 4 cloves
of garlic with a drizzle
of olive oil When cool, remove from the skin and finely
chop, it will be sticky at first Mix the roasted garlic with a few teaspoons
of salt and set aside to dry Finely
chop the dried
herbs Mix in the
chopped herbs with the garlic and salt until all the textures are combined Stir or run a knife through the mixture until all flavors are mixed well, set to dry some more, about 10 - 15 minutes When dry, place in a mason jar and keep close to brighten any meal all winter long
1 pkg frozen
chopped spinach, defrosted and squeezed well 1 can artichoke hearts, drained and rinsed then
chopped 1 onion, finely
chopped and sauteed until cooked very well 1 can white beans, drained and rinsed 2 tbsp nutritional yeast juice
of 2 lemons 1/2 cup water 1 tsp garlic powder freshly ground black pepper to taste optional — a few dashes
of a
herb blend such as Mrs. Dash optional — for a creamier party version add some cashew butter
Ingredients: 4 cups white cannellini beans, canned (drained and rinsed) or already cooked juice
of 1/2 lemon Extra virgin olive oil as needed (I didn't need much, 1/2 c or so) 1/4 cup
chopped sundried tomatoes (packed in olive oil) 1/2 cup canned tuna (200g) your favorite italian
herb blend salt and pepper to taste
Non Dairy Creamy Herb Ranch:
Blend 1/2 cup cashews, 1 cup
chopped celery, clove
of garlic, 1/2 cup water, 2T freshly squeezed lemon juice, 2T red wine vinegar, 1 / 2t salt, a few grinds
of black pepper, 1/2 -1 cup
of various fresh
herbs (I used chives, parsley, basil).
For more flavor, add a spice
blend or mixture
of chopped fresh
herbs to the mushrooms before roasting.
