A nutty mixture of chopped peanuts and rolled oats is combined with pumpkin purée and studded with sweet
chopped dates for a treat that's as nourishing as it is satisfying.
I substituted 4 pitted
chopped dates for the 1 t of agave nectar and my husband I and found it surprisingly sweet enough!!!
Also used dried cranberries and
chopped dates for the raisins.
We've also tried replacing the banana with apricot applesauce and those came out great too (we added
chopped dates for sweetness).
This turned out SO well — I substituted
chopped dates for the cocoa nibs but otherwise followed the recipe exactly.

I used canned great northerns and subbed
dates in
for apricots, dried blueberries
for raisins, and
chopped walnuts
for the pumpkin seeds.
I used normal
dates, and I found that if you
chop them up small and place them in the food processor with the hot kumera
for a few minutes, the hot kumera actuallly softens them so they blend nicely.
The
date caramel was great but I just made another recipe with a similar process but instead you poured boiling water over roughly
chopped dates, left them to sit
for 10 mins and then blended, this created a much smoother paste.

For chopping dates and anything dry, make sure you're using a food processor rather than a blender as a blender really needs a liquid in order to work!
I buy nuts already ground /
chopped, seeds can be crushed in a pestle and mortar, and with
dates (or other dried fruit) they can be
chopped small, gently heated in a pan with a splash of water, and then they're soft enough
for a stick blender!
