We kept the layers of potato (and made it easy by using a vegetable peeler to make thin slices right into the pan), but encased them in a tender chickpea - flour batter with
chopped roasted peppers and green olives.
Our pasta dish can be as simple as the one presented here, or modified by adding diced avocado, chopped red onion, sliced black olives and
chopped roasted peppers.
Pulse the chopped tomatoes in the mini chopper and add to the pot together with the water,
chopped roasted peppers and the rind from Parmesan cheese (this will add a lot of flavour).
Chopped roasted peppers, a few black olives and sweet grape tomatoes give this salad pizzazz.
Remove the skin and
chop the roasted pepper into chunks.

We can get tortillas here, and to have our «breakfast portions» of
