Try banana walnut pancakes: simply use
chopped walnuts instead of the chocolate chips for a different twist.
I baked half quantities and used
chopped walnuts instead of oats and soured milk instead of buttermilk and it turned out brilliantly.

I didn't have all the ingredients, so I used almond butter and
chopped walnuts instead of peanut butter & peanuts.
Used 3 1/2 oz of
chopped walnuts instead of 4 (1 cup of walnuts is 4 oz by weight).
With the non-espresso version I might mix in
chopped walnuts instead.
The only thing I'd change is to
chop the walnuts instead of leaving the halves whole when finishing the sauce.
