"Chorizo mixture" refers to a blend or combination of ingredients used to make chorizo, a type of spicy sausage commonly used in Latin American and Spanish cuisine.

Toss potatoes, half of aioli, half of scallions, and reserved
chorizo mixture in a large bowl; season with salt if needed.

Then I grated some white cheddar placed it for melting, turned off the heat because cast iron holds its heat, placed
