choy from my CSA box I will either make into chips or use in a miso soup.

choy, mung bean noodles, a homemade Chinese 5 Spice mix (made
from peppercorns, star anise, cinnamon, cloves and fennel seeds).
Remove the leaf part

choy and slice both the stem and leaves but keep separately.

This was a very tasty dish - pretty much followed the recipe, using bratwurst sausages, aside
from not being able to find bok
choy so used fresh collard greens.
I think this bok
choy just got upgraded
from delicious to a downright guilty pleasure.
Using the same knife, chop the onion (however you like), remove the stems
from the broccoli, cut the carrot into slices, and chop the end off of the bok
choy and separate the leaves.
It's flexible, too — use a different grain if you'd like (this is adapted
from a rice dish in Vegan Express); use a different green other than bok
choy (kale would work); and if you can't find edamame or prefer not to use these tasty green soybeans, substitute green peas.

My hubby once brought bok

choy went into stir fry, which is honestly the best way to handle much of what comes
from the CSA.
And that building healthy bones comes more
from nutrient dense foods like dark leafy green vegetables, broccoli, kale, collards, and bok
choy as well as whole grains, than just a diet loaded with non-organic dairy.
(A huge issue is the execution of those veggies by Aramark, as you can see
from my photos of near - brown, limp spinach and bok
choy).
