cold butter, pulse again 7 - 10 times, until the mixture looks like coarse meal, with pieces no larger than small peas.
Cut in or pulse in shortening and
cold butter, just until mixture is coarse and no large
chunks of fat remain.
This way I can still get the flaky crumble when the muffins are baked that
cold butter will give you, but I have the
