What's in it: For the french toast --- 1/2 large loaf of multigrain
bread, ideally a few days old, cut into 1 inch cubes (about 5 cups cubes)-- 4 large eggs — 1 1/2 cups vanilla almond milk ** — 1 teaspoons
cinnamon — 1 teaspoon vanilla extract — 1/4 teaspoon salt For the apples --- 3 - 4 apples, thinly sliced — 1/2 teaspoon
cinnamon — 1 tablespoon coconut oil For the topping --- 1/3 cup roughly chopped raw
nuts and seeds (I used almonds and sunflower seeds)-- 1 - 2 tablespoons brown sugar (depending on your sweetness preference)-- 1/4 teaspoon salt
:) Anyway, pictured is an assortment of whole - grain pumpkin, zucchini, corn
bread, and blueberry muffins or you could also add some banana
nut or
cinnamon raisin muffins to the mix as well.
So far this fall I've made some other sweet, comforting
breads — banana
nut and apple
cinnamon — but I couldn't let another fall season escape without a pumpkin
bread recipe!
I'd like to try the banana walnut hemp, carrot raisin,
cinnamon date and fruit &
nut sprouted grain
breads.
The vegan banana
nut bread starts with banana flour and
cinnamon — the
cinnamon is optional, of course, but I'm having all the fall feels lately and it's so complementary to both the banana and nutty flavors going on here.

This exceptionally moist and delicious banana

cinnamon 4 overripe bananas 1/4 c of Chobani non fat plain yogurt (you can use 2 % as well) 2 eggs 6 tbl of melted I can't believe it's not butter (or regular butter) 1.5 tsp of vanilla extract Optional: Top the
bread with your favorite
nut (I used about 1/3 c)
But having a loaf of this
cinnamon raisin seed and
nut bread on hand makes them significantly more bearable.
i have fond memories of my mom toasting
cinnamon swirl raisin
bread nearly every morning, of which i would bypass and hit up the honey
