The study, reported today in the journal Nature Nanotechnology, presents the newest entry in a
class of substances known as bicontinuous jammed emulsion gels, or bijels, which hold promise as a malleable liquid that can support catalytic reactions,
electrical conductivity, and
energy conversion.
