coarse or fine
salt will
work, it's your call.
If you bash up certain
coarse salts with a mortar / pestle, that
works nicely too.
It also
works well to take a walnut - sized chunk of dough, roll it into a ball, flatten it into mixture of
coarse sugar and sea
salt, and bake it that way instead of rolling and cutting.

coarse salt (no table
salt available) and I think it
worked well to balance the sweetness.
I like to use
coarse sea
salt, as the large crystals give a nice crunch without oversalting the potatoes, but kosher
salt works nicely, too.
