The second reason why these are called hot chocolate
cookies is because they're also amazing served
with hot
cocoa on the side for dipping and dunking.
These
cookies taste like little
cocoa cakes, but are made
with clean ingredients like whole wheat flour, oats,
cocoa, olive oil, honey and almond butter, and packed
with cranberries and pistachios.

Add too much
cocoa powder to the dough and you'll end up
with dry, crumbly results; don't add enough and your
cookies won't have any flavor.
Then something magical happens - you whisk some of the toasted marshmallows into the hot
cocoa (
with some
cookie butter) and it transforms into a thick, luscious concoction.
I added a half cup more date paste than usual
with my
cookies, because I wanted to make sure they were still soft, and to balance out the sight bitterness of the dark
cocoa powder.

cocoa powder, unfortunately, it's usually not a good idea to swap in cacao — your brownies,
cookies, or chocolate cake will come out
with a different consistency and flavor, because cacao and
cocoa are processed differently.
