I used Bob's Red Mill Almond Flour in these keto - friendly cookie dough bites are enveloped in a thin
layer of colored keto
coconut butter.
I already used
coconut oil as a base for my homemade whipped body
butter, so I was totally up for applying a thin
layer before -LSB-...]
To make the white
layers, soften the
coconut butter and the 2 tablespoons of
coconut oil and mix them together with the unsweetened shredded
coconut, stevia, and peppermint extract.
Primal candy: melt and
layer (or combine) any of the following ingredients: Cacao Powder Cacao

So while I liked that the
coconut butter version had a whiter center, I opted for the better texture and flavor (way more important) by using soaked cashews,
coconut oil and cacao
butter as the middle
layer.
Most vegan slices or bars use
coconut butter in the middle
layer, but I wasn't thrilled with the «mouthfeel» (yep, I just said that) afterward when using
coconut butter.
Add a 1/4 cup peanut
butter to the nougat
layer and reduce the
butter and
coconut milk to 2 tablespoons.
You'll have to do a bit of experimenting if you need to leave out the
coconut oil /
butter, since it is used to help firm up the cake
layers.
To make the peanut
butter / chocolate
layer: place the pitted dates,
coconut oil and the peanut
butter into the food processor.
To make the peanut
butter chocolate
layer add the
coconut oil, cacao powder, peanut
butter, maple syrup, and 1/4 tsp salt to a small pot over medium heat.
Melt remaining 1/2 cup of chocolate chips and
layer 2 teaspoons over the
coconut butter.

8 — While your strawberry
layer is firming up, stir remaining 1 - 2 drops of stevia (or 1/4 tsp vanilla) into the last of the
coconut butter and stir to combine.
7 — Once all your cups are topped with their pretty pink strawberry
coconut butter, you need to pop them back into the fridge or freeze for 5 mins to set before adding that final, vanilla
layer.
When
coconut butter is liquified, poor on top of dark chocolate
layer and add desired toppings.
Layer two is the «caramel,» actually almond
butter, vanilla, and
coconut oil.
Instead of adding sweeteners I just place fresh or frozen strawberries in the muffin form and pour
coconut butter over it, leave tops of fruit out and cover with thin
layer of
coconut butter.
Variations Nut - Free Carrot Cake: Top the cake with your favorite vanilla nondairy yogurt or a thin
layer of
coconut butter (a recipe for homemade
coconut butter is provided in Practically Raw Desserts!)
