coconut icing, dreamy smoothies, baked apple and cinnamon porridge, berry scones with
coconut cream, almond butter fudge and raw banana splits!
As the
cake cooks make the icing, simply place the solid
coconut milk (not the liquid part) into a bowl and whisk
for about five minutes, until nice and fluffy.
And I can attest to the fact that solid
coconut oil is a good sub
for butter in pound
cakes.
My next test is making pound

So many chocolate layers with a sugary pecan -
coconut filling in between and then iced in more chocolate... it's certainly not a
cake for the faint of heart!
This fall my family was gathered around my mother, whom we were caring
for in her final days... we took time to celebrate a birthday with a special kind of carrot
cake... we used the leftover carrots / apples / celery and who knows what else from the morning's juice (my dad's a bit of a health nut) and turned it into an amazing
cake, complemented by walnuts, pineapple and, of course, decadent cream cheese frosting, covered with fresh toasted
coconut... it was so moist and delicious... the making of it a wonderful memory and the eating of it sublime.
