While this recipe looks great, I would not eat it due to the sugar in the chocolate
chips and I avoid
coconut sugar
too.
Tossing these
coconut chips with oil and sweetener is a fun hands - on activity — you can let your kids choose the seasoning,
too, so they feel even more involved.
I'd say it's best to use solid or semi-firm
coconut oil... I found that using butter that was
too runny affected my traditional chocolate
chip cookies, so I imagine it's the same with the
coconut oil.
I also munched on some macadamia nuts and

too much actually but they kept me very full until late afternoon.
The unsweetened
coconut chips I found at Trader Joe's (they've been added to my TJ's must - have list) but I know Bob's Red Mill also sells them in the organic or health food section of most grocery stores, otherwise you could use shredded
coconut too.

I did make a few substitutions though — I used
coconut oil instead of the palm oil (i added about a teaspoon more
coconut oil once I had mixed everything together because the mixture was a bit
too crumbly and dry for my liking) and I also added a teaspoon or so more of honey due to the dryness of the mixture... I didn't use any white chocolate
chips, and used vegan dark chocolate that i chopped up because i didn't have «
chips» as such....
Ok so I didn't add blueberries like I intended
too and left out the chocolate
chips and the
coconut oil.
I think I will be adding more chocolate
chips next time — and maybe some
coconut and pecans,
too.

You can always create your own trail mix with some dried fruit, shredded
