cookies using unsalted butter, 3/4 cup of whole spelt flour (because I had
only 3/4 cup of oats), and brown sugar (because I didn't have
coconut sugar).

I assumed the difference in consistency was due to the fat (since that seemed to be the
only difference) I really preferred the
cookies the first time... so the third time I made them I used
coconut oil assuming the batter would be thin again, but it wasn't, the batter was very dry and thick again.

coconut oil is the dough tends to get soft after working with it and it warms up to room temp.

Not
only are these butterscotch and
coconut cookies flourless, they also don't require an oven, making them ideal for the hot summer or whenever a craving strikes.
Only difference is I put
coconut oil, salt, pepper together in a sheet pan (
cookie pan with sides) and put it in the oven while it preheats.
My
only problem was the
coconut caramel mixture did not stick to the
cookie layer.
Which has a couple of benefits: a) naturally sweet so just a touch of maple syrup is plenty b) naturally starchy so the
only flour we need is a couple tablespoons of

After all of my experimenting with Elana's chocolate chip
cookie recipes, I found that the measurements in this recipe are really good, but I
only use pasture butter in my
cookies and I don't use agave and have been using
coconut palm sugar with great success (melted in a pot with the butter and 2 TBSP of water).

coconut flour is pretty dry, and so if you've never used it before, you should expect a dryer
cookie and just make sure you eat it with milk (or almond milk!)

only idea would be to make sure you are using Bob's Red Mill
coconut flour since I know the
cookies worked best for me when I used that brand.
