curry but stir frying the veg separately, and cooking the
sauce in a
sauce pan,
adding the
coconut curry sauce in the bowl, rather than the pan.
I made the
coconut curry sauce and
added some chicken and it was absolutely incredible.
This
curry definitely had quite a bit more
sauce than some of my other chicken dishes (like the spicy cashew
coconut chicken) but I don't remember it being soupy... If you'd like the
sauce a bit thicker next time you can always either reduce the amount of water or simmer it uncovered before you
add the
coconut milk.
Directions: Heat oil in a large skillet / Cook onions until soft and translucent /
Add garlic, ginger and
curry powder and stir fry for a couple of minutes until aromatic /
Add tomatoes, green beans and potatoes along with the
coconut milk / Stir and let simmer, partially covered, for about 20 minutes until the potatoes are soft /
Add tofu cubes and season with salt, pepper and chili
sauce to taste.
Coconut cream or milk can
add richness and flavour to dishes like laksa,
curries and mushroom
sauce.
Add in the
sauce ingredients: lime, water,
coconut milk, powdered peanut butter, oyster
sauce,
curry paste,
coconut sugar and soy
sauce.
Add curry paste, tomato paste, soy
sauce, sugar,
coconut milk and fish
sauce, and saute, still stirring frequently, for a final 10 minutes or until mixture thickens, slightly reduces, and all flavors combine.

coconut milk as a higher - calorie substitute for dairy milk.

sauce (start with 2 TBL and work up - saltiness varies by brands),
coconut sugar or sucanat, and red
curry paste (can adjust to taste).
