I can't tell if the grainy texture comes from the
fat molecules in the
coconut milk
solidifying when chilled, or if it's a grainy texture from blended
coconut (the way
coconut butter has a similar grainy texture.)
Just refrigerate a can of full
fat coconut milk, scoop the
solidified coconut milk off the top and whip it up in an electric mixer.
Open the can of full
fat coconut milk and scoop out the
solidified coconut cream into a medium sized mixing bowl.

Keep in mind that while
coconut oil is great for making
fat bombs, pure MCT oil won't work in this recipe, as it won't
solidify.
You want the
coconut milk to be cold so that the higher
fat cream
solidifies.
