I didn't know what to expect actually, while cooking this curry, the aroma of kaffir lime and
coconut flavour filled the whole house... very delightful and mouthwatering.

There wouldn't be any need to add some
coconut essence as the
coconut oil does» t add that much
coconut flavour - that comes from the
filling, but I'm sure it would be a nice addition anyway!
I originally tried to make these with minimal ingredients, but the
coconut butter in particular is vital to keep the
filling from crumbling, and helps add to the strong
coconut flavour.

I quite like the subtle nutty
coconut flavour, adds a little something extra to the
filling.
Although it's a healthy version of the classic shepherd's pie it is a very
filling and wholesome meal which easily serves up to 6 people.The rosemary and thyme add a slightly Mediterranean touch which blends nicely with the
flavours of the sweet potatoes and
