Coconut oil and honey have
very different textures and
flavours.
The texture was a little less grainy because of the finely ground
coconut flour but the
flavour was
very similar to a sweetened cornbread recipe.
The oats provide their almost - nutty malty
flavour and the yoghurt a
very soft tang, all bundled up in the warmth of cinnamon and a hint of
coconut.
I didn't know what to expect actually, while cooking this curry, the aroma of kaffir lime and
coconut flavour filled the whole house...
very delightful and mouthwatering.
So, needless to say I was
very excited to give this natural
coconut flavour a try.
The
coconut flavour is usually
very subtle if it's incorporated into the baking mixture, whereas if you use the oil to fry something (like yummy blueberry pancakes) you get a much more intense
coconut flavour, which I personally love!
Removed the peanut butter since the
coconut oil has a
flavour very similar to peanut
Regarding the cocoa, I wouldn't replace it with
coconut flour as they do have
very different functions (
coconut flour absorbs a ton of liquid and any more than the current 1/4 c will get a bit mealy tasting, the cocoa adds bulk and
flavour).
These macaroons are
very tropical, sweet and just slightly tart
flavour mixed with all the richness that comes from
coconut.
Coconut nectar is one of my favourite sweeteners, and here's a laundry list as to why: it's low GI (35),
very affordable (even when buying organic), minimally refined, and has an amazing taste - try the light version for a honey replacement, and the dark for a maple syrup type
flavour.
Although it's a healthy version of the classic shepherd's pie it is a
very filling and wholesome meal which easily serves up to 6 people.The rosemary and thyme add a slightly Mediterranean touch which blends nicely with the
flavours of the sweet potatoes and
coconut milk.
