I used white whole wheat
flour but you can substitute a
combo of almond, oat, and / or
coconut flours if you want a gluten - free version.
So best stay with the
coconut / almond
flour combo because is less expensive.
But the
coconut / almond
flour combo was on the money.

I have been playing around with
coconut flour and yoghurt
combos a lot these last few days... such a revelation of simplicity and so versatile.
They're made from a
combo of sprouted whole grain spelt
flour, avocado,
coconut sugar, pure maple syrup and Silk's protein - packed Organic Soymilk.
Is the sunbutter layer the
combo of the honey /
coconut flour / vanilla or just the sunbutter?

coconut flour, and ground chia I experimented with, I kept ending up with loaves of pumpkin bread that were on the mushy, almost soggy side.
As I work with cassava
flour more and more, I find that it doesn't do as well in egg - free baking as does a
combo of
coconut and arrowroot
flours, for example.
I also took the liberty of making these with
coconut flour, flax, and some vanilla plant - based protein powder like my other recent muffin recipes because this
combo creates a wonderful texture for muffins that tastes like cake but has no wheat
flour or refined grains.
I'm going to try it again using only almond
flour because I like a denser texture and wonder if maybe the
combo of
coconut butter and
coconut flour (which I know absorbs more liquid!)
