i have to say i doubled all the ingradients and i got 14 very tiny
cookies... so i really don't see how you got 12 small
cookies out of just three tablespoons of
flour... also i had to add some
flour as they got quite runny, it think maybe too much
coconut oil... they break very easily, not good
for guests, they do not look very nice, mostly came out as crums, but they taste good anyway.

for a few minutes but trust me
coconut flour is
flour that has PMS!
Stein's nutritional studies, as well as her love
for homemade baked goods, certainly guided her ingredients: the
cookies contain no refined sugar (they're sweetened by organic
coconut sugar) and use millet, almond and garbanzo fava bean
flour.
It's about 3 times as absorbent as other
flours, so we'll use a lot less and let the
cookie dough rest
for 10 minutes to allow the
coconut flour enough time to do its thing.
I have been playing around with arrowroot and
coconut flour quite a bit
for cookies and muffins!
Some recipes call
for almond
flour or a combination of
coconut flour and some arrowroot powder, but the
cookie we always have in the freezer uses almond butter as a base and was created by Danielle Walker of Against all Grain blog and several cookbooks.

for vegan, paleo almond
flour cookies last week, asking if
coconut flour might work in place of the almond
flour.
I've seen some interesting
coconut flour based shortbreads whilst strolling through google searches but it's not my fav
flour for cookies, honestly!
This is one of my absolute favorite make - ahead breakfasts, since I feel great about what's inside them (almond and
coconut flours, raw nuts and seeds,
coconut oil and eggs) and my kids think they're actually eating «
cookies»
for breakfast.
I recently tried this recipe from Imma Eat That blog
for coconut flour chocolate chip
cookies, and it's the best one I've come across...
1) Melt butter 2) Dissolve sugar in melted butter 3) Mix sugar butter mixture with self - raising
flour until homogenously mixed 4) Knead
cookie dough with your hands on a cool, flat surface, using a rolling pin to flatten it to 0.7 cm thickness 5) Use a round
cookie cutter to cut out round pieces 6) Arrange the
cookie dough pieces on a greased baking tray 7) Bake at 200 deg cel
for 8 — 10 minutes or until they turn slightly golden brown 8) Spread dulce de leche on one
cookie, and cover it with another
cookie 9) Coat the sides of the
cookie sandwich (the parts where dulce de leche is exposed) with shredded
coconut
For the
cookie: In a medium bowl, whisk together the tapioca starch,
coconut flour, salt, baking soda, and cacao powder.
I used half AP
flour, half WW pastry
flour (I like chewier
cookies and thought the AP might help in that respect), brown sugar, halved the oats and subbed in unsweetened organic
coconut for the rest, doubled the salt, and used Trader Joe's bittersweet chocolate.
