coconut flour tortillas and ran with it!
Based on feedback from readers, I thought it would be useful to include some tricks for making
these coconut flour tortillas.
If we are going to eat Mexican food, I bring
coconut flour tortillas.
Thankfully, I have come up with a solution: homemade, baked tortilla chips using cassava
coconut flour tortillas instead!
In this case, Allison chose to bring
coconut flour tortillas to swap for taco shells, and made some hazelnut flour cookies.
Our favorite tortillas are Austin - based company, Siete, who makes cassava (yucca) and
coconut flour tortillas that are so tasty and low in carbohydrates and no white flour!

coconut flour, but I prefer not to use
coconut flour for various reasons, and this recipe simply works so well for me!
P.S., this extends to
tortillas and
coconut flour wraps as well.
To make GAPS legal
tortillas, since we can do
coconut flour, I've made a type of gordita (soft, thick taco bread) shells instead.
