granolas in the Free From aisle.
Hi Ella, I've just had this for breakfast today for the first time (I added fresh raspberries, toasted
coconut flakes & a spoonful of
granola for crunch); very moreish & decadent!!!! Next time I would use less chia sedes (maybe just 1 teasp) as I feel overfull (I can almost feel them expanding
in my tum!!!)
When the
granola reaches room temperature, mix
in the toasted
coconut chips and raisins.
Start by making your base; mix the
granola,
coconut, peanut butter and salt
in a large mixing bowl.
Place the apples
in a bowl and use the pan to heat up the remaining
coconut milk for a minute or two, then pour this over the apples, add your
granola and enjoy!
So versatile — how about rice pudding, cream pies such as
coconut cream, banana cream, use
in place of milk with
granola and the list goes on and on.
But really, this oatmeal is like the best of both worlds — all those heart - healthy oats with cholesterol - lowering soluble fiber paired with the subtle sweetness from
granola and
coconut... heaven

There is ingredient overlap (I've always liked
granolas with oats and
coconut) and
in both I experiment with egg whites as a clustering agent.

I've been super interested
in incorporating
coconut oil into my cooking and have been trying to find different ways to do so but didn't think of
granola!
Here's the thing: 95 % of
granolas have
coconut in them.
This time round, I wanted to use up some of the dried persimmons I had left
in the freezer and so I combined them with
granola, walnuts, dark chocolate chips, and unsweetened
coconut flakes.
For No Bake

For Crunchy
Granola Bars, combine 1 cup finely ground nuts, 1/2 cup granulated sugar (
coconut palm sugar, light brown sugar and / or white granulated sugar), 2 cups old fashioned rolled oats, 2 cups puffed rice cereal
in a bowl and mix.
coconut flakes (I only use flakes
in granola and
granola bars, not shredded
coconut, which tastes like dental floss
in granola)
Top with the mix -
in's of your choice (dried fruit, raisins, raspberries, chopped nuts,
granola,
coconut, a drizzle of honey or chocolate, sea salt, etc.).
Coconut and vanilla is such a great combination I made snickerdoodle
granola the other day, I can not stop snacking on it * hangs head
in shame * it's so good!
Good, homemade
granola is slightly sweet, wonderfully crunchy, and chock - full of delicious extras — nuts, dried fruit, warm spices,
coconut, or pretty much anything else you could think of that would be delicious smothered
in a little butter and sugar and baked up to crispy perfection.
All the crunch from this
granola comes from the fact that I use a good amount of
coconut butter (aka crack) and that I bake it
in a large
coconut cake.
Bake for 15 minutes, then mix
coconut flakes and raisins
in granola and bake for around 10 — 15 minutes.
The secret weapon
in this addictive
granola is, yes, olive oil, which gives the oats and
coconut chips a wonderful crispy bite.
While you can douse this
granola in either
coconut milk or almond milk, chocolate almond milk is actually our family's preference.
What's
in it: 1 15 - oz can of pure pumpkin puree 2 tablespoons good quality maple syrup (less if you are watching sugar intake) 1 teaspoon vanilla extract 1 teaspoon pumpkin pie spice 1/2 teaspoon cinnamon 2 cups non-fat greek yogurt (recommend plain but if you need extra sweetness vanilla would work) Toppings: Low fat
granola, chia seeds, dried cranberries, chopped nuts, toasted
coconut

coconut - based products, by the way, just out of brown sugar and fond of the crispness I get from
coconut oil

coconut granola, I bookmarked it straight away.
With these words
in mind I grabbed a Squarebar protein bar, gluten free rolled oats, nuts,
coconut oil and created a yummy
granola clusters recipe.

Coconut Granola?
Directions: Blend
granola and
coconut oil, spread and press firmly down
in a 8X8 pan covered
in parchment paper.
Admittedly, this seems a little high - maintenance for breakfast — and there is some planning that goes into making both the roasted strawberries and the chocolate -
coconut granola — but it's almost entirely hands - off time, and can be easily (and preferably) done
in advance.
The
granola I wish I could share a recipe for because it was dynamite but they were just tossing amounts on the cutting board and I really don't know the measurements but the ingredients that went
in were steal cut oats, organic peanut butter,
coconut sugar, cacoa and crushed cashews.
Once it's chopped mix
in the
granola and the almond butter and
coconut oil (or butter).
Notes: I prefer to use the 1/2 cup measurement for both the pure maple syrup and
coconut oil (because I'm not a fan of clumpy cereal
granola or overly sweet
granola) but if you are a fan of super clumpy and / or sweet cereal
granola, use 3/4 cup for both (you'll have to follow another step
in the recipe to ensure the
granola is clumpy, BTW).
Serve
granola in a bowl over fresh fruit (sliced peaches, berries, or banana), you can add
in your favorite dairy free yogurt or a dollop of
coconut cream.
* I like to let my frozen fruit sit
in the blender for a few minutes so it blends with less liquid (makes for a thicker consistency) Toppings and Bottomings Rawnola or

Coconut Shreds
Pulse the
granola in a food processor until coarse crumbs form, then add the
coconut oil and pulse to combine.
