Combine the rum, banana,

ice in a blender and process until smooth.
The
ice cream itself has a fairly intense
coconut flavor and can stand alone if need be, but the cherries really round out the flavors
in the
ice cream.
I use this
in my homemade
coconut milk
ice cream to change it to coffee - flavored and wow it's awesome.
I especially love it
in soft - serve
ice cream,
coconut creme brulee, raspberry custard tartlets, fudge pudding pops, though it makes a fantastic base for dairy - free shrimp chowder, too.
Then, once cooled, you literally tear it up (note the bowl of cake bits above), knead
in some chilled
coconut milk (yep, that's that
ice cream looking blob on the cake bits), and roll into bite - sized balls (see above).
If I had to call myself an expert
in something, I think it would have to be
coconut ice cream.

coconut milk instead of a combination of whole milk and heavy
cream (though certainly those ingredients could be substituted
in to make a more traditional
ice cream).
I also added some toasted
coconut and lemon zest after the straining step which added a nice touch (although the flakes got caught up
in the
ice cream maker paddle - next time I'll chop them up finer).

My favorite
