for an experiment, so I decided that we would try canned
coconut milk as the base
for our
ice cream.
Coconut milk is much creamier, almond
milk is a little thick but bland if you go
for the unsweetened kind, and flax
milk tastes like melted vanilla

Since I was diagnosed lactose intolerant I realized that my love

cream probably wasn't helping my current GI and stomach pains, so my mom got me some

ice cream is a fall treat, on its own or served over a warm dessert.You can cook a fresh pumpkin
for this recipe if you like, but canned works just fine.
Some early attempts using bananas didn't pan out quite as I'd hoped, but Marla's Vegan Chocolate and Cherry
Ice Cream inspired me to change course and use
coconut milk for the base instead.
I adapted this recipe from my vanilla blender
coconut milk ice cream - so I just used the same method as that but the frozen berries and
