I used
coconut milk for the creaminess here and the
coconut flavour wasn't
too strong for me when combined with plenty of garlic, earthy leeks and spinach as well as a good dose of nutritional yeast, but if you're not a fan then you could swap
in any other non-dairy cream (soy,
coconut etc - there are various available commercially these days).
I think the
coconut flour tapioca combo is great and now of course I'm obsessed with putting
coconut butter
in there
too, but my classic version is made with

The most awesome about living

From what I read yesterday, we can't drink the unsweetened almond and
coconut milk in the dairy case — it has carageenan and

It's a refrigerated product, and it's not like what you get
in the cans; it's much thinner and lower - calorie (though using canned
coconut milk could be yummy
too).
Since the 1 cup of
milk in the original recipe makes the
coconut flour version
too fragile I swapped 1/2 cup of
milk for 2 eggs.
I've found that gums
in carton
milks don't make me feel so good and have switched to pretty much all
coconut milk in a can, so it's bound to make some appearances around here
