I didn't have
coconut milk on hand so I used the extra thick cashew milk that I had..
I used my own icing recipe as I didn't have
coconut milk on hand so I can't say how delicious yours is (though I'm certain it is awesome!!).

So, if you don't have any buttermilk
on hand, just use
coconut milk with lemon juice, as indicated in the recipe.
I don't usually have parmesan or heavy cream
on hand unless I'm using it for a specific recipe,
so I switched up the sauce with two of my pantry staples: canned
coconut milk and a block of mozzarella cheese.
