I've made mousse using avocado but am itching to try
the coconut milk version.
Typically, I make mine with raw milk and cream, but
this coconut milk version offers amazing taste and nutrition and it's a dairy free option too!
It's hard to do a true comparison since I can't taste the two versions side by side, but I think
the coconut milk version is even a little better.
My son is allergic to cow's milk, so I was excited to try
the coconut milk version.
I thought it would be easy to do
a coconut milk version and to eliminate the refined sugar, so I used a mix of maple syrup and stevia to sweeten the coconut milk, and a dash of vanilla for another layer of flavor.
When adding curry powder to lentils,
the coconut milk version really adds to the depth.
And I am alllll about
the coconut milk versions.
The coconut milk version would probably have been creamier & richer (I'll try that next time) but it turned out well, anyway.
A coconut milk version sounds delicious, I have to try that sometime!
