For my Pure Fuel post today I decided to make a trail
mix with a mixture of
nuts, ancient grain cereal, dried fruit,
coconut flakes, and dark chocolate covered espresso beans!
I bet these were yummy — I made something similar (we called them healthy bounty bars) once —
mix of dates, cashew
nuts,
coconut and chocolate chips) and I think they were what powered me, my boyfriend and my sister on a gruelling hike in Sardinia in 40 degree weather.
Roughly chop the brazil
nuts, then
mix the oats,
nuts, sunflower seeds, ground ginger and
coconut shreds in a large
mixing bowl.
Put the
nut butter and
coconut oil in the food processor and
mix for 1 minute or so.
The
mix of sweet dates with rich cacao, roasted
nut butter, almonds,
coconut oil and a pinch of salt will make everyone happy!
Toss in the
nuts, raisins, and shredded
coconut, making sure that everything is
mixed evenly.
I split the
nut / oat
mix in half and made one batch with a scoop of almond butter and a bit of
coconut oil and they are so good!
I used a wide variety of toppings, including: India Tree nature's colors sugar sprinkles in marigold, dried cranberries, dried tart cherries, salted almonds, and trail
mix with
nuts, dried fruit, seeds, flaked
coconut, and dark chocolate chips.
Place the oats, chopped
nuts, pumpkin seeds, flaked almonds and
coconut chips into a
mixing bowl.
Our
coconut can be used in a range of food products, and is perfect for: Baking, Fruit and
Nut Bars, Cereal, Cooking and Trail
mixes.
Put in a glass and garnish with sliced banana, strawberries, raw granola (get one at your health food store or make your own by
mixing your favorite seeds,
coconut flakes,
nuts and sprouted grains), raw cacao nibs, and fresh mint.

nuts / seeds, dried fruit, and salt.
Place the oats, chopped
nuts, pumpkin seeds, buckwheat groats,
coconut chips, turmeric and ginger powder into a
mixing bowl.

For No Bake Granola Bars, combine 2 cups old fashioned rolled oats, 1/2 cup oat flour, 2 cups puffed rice cereal, 1/2 cup
coconut chips or other
mix - ins (including
nuts, if you like) into a bowl and
mix.
Note: If you make these, consider adding some chopped
nuts or
coconut to your
mix too.
For Crunchy Granola Bars, combine 1 cup finely ground
nuts, 1/2 cup granulated sugar (
coconut palm sugar, light brown sugar and / or white granulated sugar), 2 cups old fashioned rolled oats, 2 cups puffed rice cereal in a bowl and
mix.
In a small bowl,
mix together the
coconut oil,
nut butter and xylitol together until combined.
[Because I'm aware the above is slightly wordy and possibly confusing, here's the basic gist = Make a sticky protein
mix by
mixing nut - butter + protein - powder + oats / quinoa - flakes + whatever else you like in your bars - > coat them in
coconut flour and give them rectangular shapes - > coat them in melted chocolate - > fridge them - > boom!]
TRAIL
MIX: I make my own very simply by
mixing together my favourite
nuts and seeds — cashews, almonds, pecans,
coconut flakes, and then adding some dried fruit in too: raisins, figs, and dates.
Top with the
mix - in's of your choice (dried fruit, raisins, raspberries, chopped
nuts, granola,
coconut, a drizzle of honey or chocolate, sea salt, etc.).
For this, I heated some olive oil (you can use sesame oil too), added sesame seeds, raw peanuts (my favorite
nut), Sirracha powder
mix (my new invention which I feel is better than the sauce and more versatile), Chinese long beans, salt and to add extra flavor I finished this dish with
coconut flakes.
I find I prefer a
coconut flour / tapioca flour
mix more than
nut flours in baking because first of all the texture is better but also
nuts are high in polyunsaturated fats and omega 6's.
1 cup Beet Puree 1/3 cup
coconut sugar (sub any sugar) 1/4 agave netar 1/4 cup
coconut oil, melted 2 eggs 1.5 tsp baking soda 1/4 tsp salt 1/2 tsp vanilla extract 1/2 tsp coffee extract (optional) 1/4 cup + 2 tbsp
coconut milk (sub almond, rice or soy milk) 1/2 cup cocoa powder 1 1/4 cup whole wheat flour 2 tbsp corn starch 1/2 cup chocolate chips 1/2 cup
mixed nuts / seeds for topping (pecans, pumpkin seeds and hazelnuts is what I chose)
In medium bowl, combine reserved oat mixture with
coconut and
nuts;
mix well.
I used several small bowls to dip the
coconut - and sprinkle - covered cupcakes into, but for the most part I used one bowl to
mix the rest of the frostings, simply wiping or rinsing the bowl out between batches and leaving the dark - colored cocoa powder and
nut butter frostings until the end.
Next, I transferred the processed
nuts into a large
mixing bowl and added pumpkin seeds, sunflower seeds, pine
nuts, and toasted
coconut flakes.
My wife consumes this primarily, and she usually adds
mixed nuts, flax / chia seeds,
coconut shreds, and some dried fruit to this as well.
I used about 2/3 of the raisins and
nuts and 2/3 of almond flour with 1/3 of a gluten free whole flour
mix I made, with a few shakes of
coconut sugar
mixed in with the agave and my family is enjoying this cake immensely.
This is what I eat in a normal week: Chicken grilled with olive oil or
coconut oil and seasoning Ground turkey or beef with olive oil or
coconut oil and seasoning Rice noodles or rice spinach noodles (Mrs. Leepers is a great brand) Brown rice Quinoa with chia seeds
Nuts like almonds, walnuts and cashews 50/50 Spring
mix on the side of each meal Different fruits and veggies (try to eat more veggies though, as fruit has a lot of sugar)
NUTS: I have literally never made this the same twice: I'm always
mixing up the
nut blend, or adding more
coconut, or throwing something in when I have a handful leftover that I don't know what else to do with.
Mix shredded
coconut, all
nuts, and sesame seeds into baked oats.
In a food processor finely
mix oats,
nuts, shredded
coconut, flour, salt, sugar then add
coconut oil.
Dried or fresh shredded
coconut is great added to
nuts and dried fruit to make trail
mix.

mix with lukewarm - not cold as the fat in the
coconut milk needs a little heat to dissolve).
To make the batter, I
mixed the dry ingredients except
nuts and
coconut flakes (chickpea flour through cayenne) in one bowl, and the wet ingredients (
coconut oil through soy yogurt) in another.
