But I got lured in by the fact that this recipe called for non-standard ingredients like
vanilla bean and coconut oil,
and I already had both of them on hand; I've come a long way from the days when I had to check to see if I had baking powder before I made anything.
The cookies are made of dates,
coconut oil,
coconut flakes, pine nuts
and vanilla bean.
I blended it with
coconut oil to get the firmer texture once chilled
and cashew butter for a creamy richness plus a little
coconut syrup
and vanilla bean for sweetness
and flavour.

125g buckwheat flour 1 tsp baking powder 1/2 tsp bicarbonate of soda Pinch Himalayan salt 45g
coconut palm sugar 60 ml maple syrup 5 tbsp almond milk 1 tsp
vanilla bean paste 4 tbsp
coconut oil and extra for greasing 5 tbsp peanut butter
Mash your
coconut oil and almond extract together, if using
vanilla bean paste add it now.
The great news is that the
coconut oil has many great benefits
and so does
