To make them less soggy... use more
coconut oil or butter in the pan, turn the heat up
on the first side and they'll get more browned.
Add a couple tablespoons of
butter or coconut oil to your skillet (
on medium low), and when it's melted add batter in four equally sized pancakes.
Fry in clarified
butter or coconut oil on medium - low heat for about 3 minutes
on the first side and 1 minute
