For these muffins extra virgin olive
oil instead or
coconut oil will
work great, as will omitting the agave but unfortunately the dates are a really big part of the recipe so I don't know if you can replace them.

works best
for me is
coconut oil, honey and apple juice.
Add flour, baking powder, salt, and almond meal and continue mixing
for a full minute to
work the
coconut oil into the flour.
Also,
for some reason
coconut oil works better than any other
oil in this recipe, although you could go with some other neutral flavored baking
oil if that's what you've got on hand.

Just in case anyone else has to adjust based on available ingredients, here's what
worked for me: Used 3 dates and 1/2 cup honey instead of agave / yacon syrups and subbed
coconut oil for the grapeseed.
