I am sensitive to both gluten and dairy, so I made a version of this cake layered with a coconut cream based, coconut flavored pastry cream and frosted with whipped coconut cream flavored with Malibu rum.

I didn't have coconut or coconut flour, so I used all almond flour for the cake and substituted brandy for the rum.
