The sea foam frosting is a combination of egg whites and
coconut sugar for a caramelized, melted marshmallow
topping.
I used a wide variety of
toppings, including: India Tree nature's colors
sugar sprinkles in marigold, dried cranberries, dried tart cherries, salted almonds, and trail mix with nuts, dried fruit, seeds, flaked
coconut, and dark chocolate chips.

topping ingredients are combined and the
coconut sugar is dissolved, remove from heat and stir in the chopped pecans.
I used pumpkin liquor instead of bourbon, 1 cup regular flour and 1/2 cup
coconut flour, added 1/4 cup of chocolate chips and sprinkled about 1 tsp of brown
sugar on
top before putting it in the oven.

sugar -
topped coconut version.
If I'm going to make baked goods,
sugar is
sugar, and it seems a quality, sustainable, affordable product is best; however, I do use
coconut sugar as a fancy
topping sugar on occasion (for a holiday crumble for example).
You can always make your own by throwing a can of
coconut milk (not the lite kind) in the fridge, wait a day or so, then take the creamy stuff from the
top and whip that with a tablespoon or two of powdered
sugar.
Granulated
sugar is essential for creating that delicious crackled crust on the
top of the brownies and gives them their chewy texture, but unlike its refined counterpart,
coconut sugar still retains many minerals from the
coconut palm, including iron, zinc, calcium and potassium.
