Once the batter has harden, spread
the coconut vanilla frosting on top and place in the fridge.
To make
the coconut vanilla frosting take the coconut cream (or milk) and scoop out the fatty part.

frosting, you only use the fat from the
coconut milk, melt it together with a bag of chocolate chips (I used dairy free ones), add a little

coconut cream alone, add a bit of honey or maple and
vanilla, then chill for several hours to firm it up.
This
frosting can be embellished with
coconut cream, nut butter,
vanilla, mint, and lots of other things but this is the most basic recipe that I start from.

You can probably follow the
frosting recipe but just omit the protein powder AND the
coconut milk, and add 1/2 tsp
vanilla extract.
I then make a lemon icing /
frosting (thicker, often with a tablespoon or two of vegan «butter» or
coconut butter lot's of lemon zest,
vanilla extract and powdered sugar) and paste it on top, leave in a cool place to harden.
Prepare
frosting by draining and rinsing cashews, then blending with maple syrup,
vanilla extract,
coconut butter and salt until smooth.
Instead of the
frosting suggested here, I used The New Joy of Cooking's
vanilla cream cheese
frosting and sprinkled with toasted
coconut.
