Can't say that I like
coconut water on it's own, but it's perfect to add to our morning smoothies.
If you refrigerate it and try to drink it again the next day, it totally separates into a rock hard solid on top and
coconut water on the bottom.

Beth, I think it's because (correct me if I'm wrong) «lite»
coconut milk is just
coconut milk with (more)
water in it; which would make the milk / sauce a little
on the thin side as it's already calling for
water.
* A note
on coconut water... Before trying
coconut water for the first time, I was SUPER excited about it.
Liquids: After trying various combos, I settled
on unsweetened almond milk and
coconut water as my liquids for the relative nutritional benefits with fewer calories than juice or milk.
Coconut flour also has incredible absorbing powers so depending
on where you bought it and where you live (humidity), you might have to add some
water or your choice of milk to smooth it out.
