I've baked Elana's recipes using
cocounut oil 1:1 and they've all turned delicious.
For the cost of 2 cans of
cocounut milk and some fruit, I basiclly made 3 pints of my own gluten free, dairy free and sugar free ice cream for the same cost or less, to buy 1 pint.
Use cookie cutters and have him cut the shapes out from the tortillas and then fry
in cocounut oil and then once fried dip them in a bowl of cinnamon lay them out to cool down.
So be aware and tend toward consumption of foods and oils which are relatively high in monounsaturated fats like avocados and fresh California Olive oil, increase your intake of saturated fats / oils which
means cocounut and / or MCT oil and limit your intake of polyunsaturates.
The canned
cocounut milk was separated into liquid and solid when I opened it, but I reconstituted it by mixing it with a whisk before using it.
Made these today, i substituted the oil with avokado and
cocounut oil, brown sugar with cocounut sugar and butter with cocounut oil, but they still turned out sooo delicious and just the right kind of moist inside
I recently stopped buying Almond Breeze and most of the alternative milks (almond and
cocounut) because an ingredient found in most of the milks, carrageenan, iwhich s linked to cancer.
As far as mixing, I tried fermenting
the cocounut water and milk together.
