nuts) / Bake at 325º for about an hour, until skewer
comes out clean when tested / Macrina Bakery dusts the cake with powdered sugar and coarsely chopped almonds / Cake is tender until completely cooled so handle with care.
I figure I'll refrigerate that too and do the side
nuts when it
comes out of the refrigerator.
A few hours later this unbelievably delicious VEGAN, GLUTEN FREE &
NUT FREE double chocolate zucchini bread was
coming out of oven.
And lo and behold, they
came out beautifully; rich and dark, studded with crisp
nuts and lots
of deep chocolate flavor.
I think this recipe is a great base, you can pretty much use any combination
of fruit,
nuts and sweetener and it will
come out great!
How do I make what is essentially an Indian pancake without using any grains??? All I could think
of was a
nut flour, but I knew that would not
come out to a pancake - like texture.
On our fourth try (and 1,2 kg
of nuts later) they finally
came out as we hoped.
I did read the review that said these
came out crumbly and that it could have happened because sunflower seeds aren't as oil rich as
nuts so I added about a tablespoon
of coconut oil to compensate.
UPDATE May 2017: The original recipe below remains an EXCELLENT recipe, however by adding 1/2 cup
of liquid like coconut milk,
nut milk, or bone broth the batter blends smoother and the final muffins
come out of the oven with a moist inside and toasted outside.
There were some minor changes in the recipe, mostly due to limitations
of my pantry: we do not have frozen apple juice concentrate here so I just finely grated some apples and added a pinch
of sugar, let it sit for a few minutes to give the juice time to
come out; o) I also used fresh apple juice instead
of the water and didn't have any
nuts on hand (silly me forgot to check and realized the were all gone when I as in the middle
of baking) so I just crumbled some Italian
nut cookies on top
of all.
I realized I wanted to soften the butter which was totally cold, so I did something so forbidden: once the millet and
nuts came out of the oven, I laid the cold butter on top
of the millet.
