I thought you might like to know that AQUAFABA (the brine that
comes in a can of chickpeas) works wonders, not only as a binder, but to leaven as well.

The thoughts
came to me again when I was
in the kitchen making these coconut curry
chickpeas as I cracked open a
can of chickpeas.
I wasn't sure about the results but I gave it a try using
chickpeas flour instead
of the arrowroot, sesame meal
ins ted
of the flax seed and carob syrup instead
of the agave nectar... I still
can not believe how good it
came out!

This recipe is the best
in my opinion, it's
come out
of lots
of trial and error over many years, to get the balance
of textures and spices just right and also experimenting with
canned vs dried
chickpeas.
Aquafaba
comes in cans of beans like
chickpeas, kidney beans, black beans, red beans, cannellini beans.
Always keep some
cans of chickpeas in your pantry — they
come in handy quite often!
