Could you go the super easy route and use
a commercial vegan cream cheese?
I'd recommend pressing it using cheesecloth and then following a cheesecake recipe that calls for
commercial vegan cream cheese.
In short,
commercial vegan cream cheese substitutes just do not do it for me.
