In 2007 - 08, harvests of
staple crops such as barley and wheat fell by 67 per cent and 47 per cent, respectively,
compared to the previous year.
Notably, lentils are extremely low in phytates
compared to other
staple crops such as finger miller, wheat, and red kidney beans, which renders iron and zinc more bioavailable, though less bioavailable
compared to animal sources (Thavarajah et al., 2011).
