Until recently, I had no idea how to
cook dried beans fast and I really, really love beans!
Not exact matches
1 cup white rice (not the
fast cooking kind) 1 can kidney
beans, drained (fresh red peas are used on the island) 2 cloves garlic 1 uncut scotch bonnet pepper (again use fresh jalapeño if you can't find scotch bonnets) 1/4 cup sliced leeks 3/4 cup coconut milk 1 1/2 cup chicken broth 1/2 tsp salt 1/2 tsp pepper 1 tsp
dried thyme (or 2 sprigs fresh)
Pressure
cookers use steam to
cook foods
faster; that means
beans go from
dry to delightfully creamy in about half an hour.
Reduce heat and simmer until
beans are tender, 15 — 45 minutes (fresher
beans will
cook faster;
drier beans will take longer).
Lentils are the
fast food of pulses; unlike
dried beans and peas, there's no need to soak lentils before
cooking.
