What is better than a beautifully

roast dinner with all the family to join in, especially if it is a leg of lamb, slow
roasted with rosemary and garlic!
Whenever I make
roasted potatoes for
dinner I usually make extra so I can throw them into a breakfast dish like this, but it's a brilliant idea to pre-microwave the potatoes so that breakfast doesn't take forever to
cook if I don't have leftover potatoes.

In the past I would literally just
roast a bunch of veggies,
cook a pot of rice and make some sort of sauce for the week and we would eat that over and over for
dinner.
Sunday night
cooking is usually a little more time consuming, but I usually try to incorporate it into a second
dinner of some sort, such as
roasting two chickens instead of one, or steaming twice the amount of asparagus so the leftovers can become a frittata.
