cook it in the pot, not only to tenderize the vegetables but also to evaporate the liquid

Reminds me of a dish my grandmother
from Luxembourg used to make — it's a lentil
soup made with similar ingredients to your recipe — but with the addition, during
cooking of a very strong meat, she used the German Thuringer.
Lentils are cheap (find them in the bulk section for the lowest price), quick to
