I actually used it to
cook my sugar pumpkins last year and my butternut squash this year.

Sweet Potato Casserole - Flavorful,
cooked sweet potatoes mashed and blended with a dash of brown
sugar, a sprinkling of
pumpkin pie spices and a few other on - hand ingredients and finally, topped with a creamy crust of marshmallows.
(I later found out it is called a
sugar pumpkin), but it had fairly solid flesh that held up well to
cooking.
The
pumpkin puree and
sugar are
cooked together first until they are darkened and practically caramelized, intensifying the
pumpkin flavor.
The coconut
sugar in the
pumpkin butter caramelizes during the quick
cooking process.
One way to soften pepitas might be to
cook them in a
sugar or honey syrup — you could cut down on the
sugar in the
pumpkin filling,
cook the pepitas in the honey syrup, maybe thinned slightly with water, and then use them in the filling once they have softened a bit?
To make 8 full servings,

In the food processor or blender, place the

Use butternut squash or a small, firm
cooking pumpkin such as a
sugar pumpkin for the best results.

If you want a
pumpkin to
cook or bake with, a pie
pumpkin (sometimes called a
sugar pumpkin or
sugar pie
pumpkin) is your best option.

I did a whole
sugar pumpkin that was maybe on the small side and also chopped up shallots to
cook with oil and spices until they were translucent.

Although there are varieties of
pumpkin that are fabulous for baking and
cooking (
sugar and cheese
pumpkins, for example) they are not as easy to come by as butternut squash.
