The ricotta gnocchi was actually the very first Daring
Cooks challenge ever, and I remember being so excited when the only flour in the
recipe was for dusting the little gnocchi — the ricotta made them so light and fluffy!
Although I am now suitably comfortable with gluten free
cooking and baking, it's always a
challenge when using an old
recipe and turning it into a gluten free
recipe.
I'm entering this
recipe into this month's Slow
Cooker Food
Challenge over at Farmersgirl, hosted by Janice Pattie.

Recipe Challenge.
One of the biggest stumbling blocks I faced as I developed
recipes for the
challenge was to figure out a way to
cook fast, yet flavorful and filling dishes.
Although I like to try to keep the
recipes on this site pretty simple, once in a while I like to share something a little more
challenging and outside of the tush
cook box.
Cook took the
challenge head - on by recreating the menu, focusing on fresh and authentic
recipes, including hand - breaded chicken tenders as well as hand - cut aged steaks.
I just realized that this
recipe is pretty close to being «all local» for you Bay Area
cooks participating in the Eat Local
Challenge - chiles from Tierra, beans from the delta, farmers market produce, Sciabica olive oil and Three Sisters Cheese (not within 100 miles, but still from California and the neighboring San Joaquin Valley).
Cooking for one person can be a
challenge sometimes, I hope you can find a few other
recipes here that you like.
I was inspired to create this comforting

cooking personality quiz to find out what sort of foodie I am.
