Storage onions have a low moisture content and thick skins, which makes them perfect for
cooking techniques such as
braising, caramelizing, and roasting (spring onions, on the other hand have thinner skins and a higher moisture content, making them more suitable for raw preparations).
As you can imagine their necks are very thick with lots of yummy lean meat, and just enough gelatinous meat and bone to make this cut perfect for slow
cooking and
braises.
Halfway through
cooking the ribs are wrapped in foil to begin a
braising process that tenderizes the meat.
So of course a pot of slow
cooked and
braised chicken cacciatore it was!)

I feel like not enough people know beef short ribs, or recognize them in the grocery store — they're short and square, unlike typical ribs, and are best
braised (
cooked low and slow) to break down the tough connective tissues.
I've talked about my love of roasted (and
braised) radishes before; they show up in this colorful medley of roasted potatoes and fennel, where I tell the story of how I used to think
cooking a radish was silly, but now know better.
In fact, I always argued that most of the things people thought they liked about meat they actually liked about the sauces and
braises and spices they were
cooked in, which is why I have been dreaming up a vegetable based bourguignon for ages.
Out of all the
cooking method, I love the
braised chicken the best.
The slow
braising cooks the ribs to perfection, while the quick grilling adds the finishing char and smoky flavor.
After
braising about 30 pounds of chuck roasts, I finally discovered the perfect clone with a taste - alike adobo sauce that fills your roast with flavor as it slowly
cooks to a fork - tender delicacy on your stovetop over 5 to 6 hours.

Braised Whole Chicken (inspired by Fit Daffy's Chinese Poached Chicken recipe) Ingredients: 1 whole chicken - skinned and trimmed excess fat as much as possible without tearing the meat 1 Tbsp avocado oil or coconut oil (or any high heat
cooking oil of your choice — just don't use vegetable / seed oils!)
I did
cook the hell out of the chicken (2.5 hours) so if there was any risk I
braised it away.
I use a similar
cooking method (
braise in a little wine then fry in the rendered fat) for confit duck.
We found that we did not have the
cooked on black crust in the
braising pot and now we have delicious broth to make black bean soup with the leftover carnitas tonight!
