By the time the

cooking the bottom of the sweet potatoes become crisped and hold together almost completely from the
egg white running underneath and the cheese

ALTERNATIVE TO Psyllium Husk Powder: 1T soy Lechithin (get at health food / organic markets), OR boil 1 / 4c of flaxseeds - raw - in 1c of water, and when it
cooks, the gel

In a bit fancier form (you have to think ahead to have
cooked quinoa
on hand or buy
cooked quinoa) I fold quinoa and cheese into the
eggs and serve the tacos with some crumbled chorizo
on top.

top, I avoid stress or panic by having everything out and ready (including utilizes and appliances).
